An Abundance of Eats

It's been quite a while since I have done an "everyday eats" post and I didn't realize just how many pictures were on my photo stream that I had yet to share.  The recurring themes of the past several weeks have been simple meals, local produce, and egg sandwiches.  
  
Paleo Pad Thai
Spaghetti squash, tempeh, snap peas, and a peanut thai sauce
Egg sandwich with mashed avocado and sliced mini bell peppers and an orange
Matcha Green Tea Latte
Enjoyed on the deck on a beautiful early summer weekend morning
Arugula salad with peppers, avocado, and goat cheese and a sliced pear
Quinoa edamame salad over arugula with cucumber spears and a cracker with hummus
Arugula salad with tons of veggies and veggie pizza
Memorial Day Dinner (post-call)
Avocado toast, baked beans, and fresh corn salad
Fried egg sandwich on Great Harvest hummus bread
Spinach, tomato, goat cheese, and mustard
A Roasted Meal
Beets with goat cheese, sweet potatoes, and broccoli
Banana Hazelnut FlapJacked Protein Pancakes
Topped with plain greek yogurt, banana, molasses, and cinnamon
Enjoyed for dinner after a 13.5 mile run on National Running Day
Egg sandwich on Great Harvest hummus bread with apple slices
Arugula, basil (from the garden), tomato, avocado, and mustard
Farmer's market radishes - eaten raw
I saved the radish greens to mix into a spaghetti sauce I'm making for dinner tonight.
Green beans, salmon, sweet potatoes
The purple sweet potatoes were a new find at the market.  They have the consistency of white potatoes but with the sweetness of sweet potatoes.
